With Christmas and New Year’s celebrations over you may be looking to feed your body with something other than alcohol and cheese, come on, This Girl can’t be the only one!
Prior to the holiday season This Girl decided to introduce some healthier eating options and now it’s time to get back on the bandwagon! This isn’t a New Year’s Resolution, from past experience they don’t last! Instead it’s a commitment to gradual change and education about how to eat to still enjoy good food and flavour but cut out some of the not-so-good things.
This Girl went along with Cute and Caring, Too Cool and Cool Junior to a cooking workshop with a difference. Kimberly isn’t a chef, she’s a normal everyday home cook with a healthy lifestyle business; The Rabbit Hole. You will not learn fancy techniques, but you will learn about a better way of eating that can easily be incorporated into everyday life.
On her website Kimberly invites you to go down the rabbit hole with her and ‘explore how to nourish your body, nurture your soul and love the life you live’.
We chose the Magnificent Meals workshop because we wanted to learn some basic recipes that we could whip up after work!
The workshop started with Kimberly, who is both a registered nurse and a nutrition and lifestyle consultant, sharing her knowledge about food and giving us tips on how we could start to make better food choices daily. She then went on to demonstrate how to make chicken curry using a home-made spice mix, cauliflower mash, cauliflower rice and a Spanish sauce, which went so well with a meatloaf she had baking when we arrived. The last part of the workshop was getting to enjoy the meals together. Kimberly sent us away with a set of recipes and the confidence to start the changes.
This Girl has made the curry a few times, with both chicken and beef, I’m always impressed with myself each time I manage to whip up this tasty curry in such a short time. The cauliflower mash has become a favourite and I never thought I’d say it, but I could happily replace normal rice with cauliflower rice.
Kimberly also has some recipes on her website and this weekend I made her Bad Boy Muffins which are totally the opposite of bad! Gluten, nut, dairy free and with sweetness just from banana and dates, they are also a great treat if you are looking to reduce your sugar intake.
