Pico de gallo
canned diced tomatoes
for maximum flavour unless it’s tomato season (I bottle my own in February/March) or equivalent in fresh tomatoes

or less depending on taste
of a green pepper
of a red pepper
clove of garlic
red wine or sherry vinegar
Combined the ingredients and let sit for tastes to mingle, overnight is best.
